Recipe: Caramel Cinnamon Bread

I make the dough in my bread machine, put in the following ingredients in order:(ingredients are in red)

Whisk together:
1 1/2 c warm water with:
1 T yeast
3/4 T salt
2 T butter or olive oil
1 egg (optional, unless you are making it gluten-free)
pour into machine

Add:
1/4 c honey or sugar 
 3 1/2 c flour (I used white, you can use a mix of whole wheat and white or even a gluten-free mix, if you add 1t xantham gum and 1/4 t vinegar)

Set machine to dough setting,
check in a minute or so to make sure all of the flour has mixed in,  if not, scrape sides with a spatula or wooden spoon. I find that the full cycle on my machine over-rises the bread (for lack of a better word), so keep an eye on your dough.

When the dough is ready, make the caramel.
Melt 3/4 stick of butter
Add: 1/2 t vanilla
1/4 c brown sugar

Flatten out the dough and use the rest of the stick of butter to "butter" the bread with little pats. Sprinkle liberally with cinnamon and sugar, roll up, pour caramel into a buttered bread pan and place rolled bread in pan. Cover with a damp towel and let rise while the oven heats. Bake 30 minutes or until done.

When done; carefully empty the bread and caramel onto a plate or dish with curved edges to hold in the gooey goodness.
